The OPINEL PARALLEL 121 fillet knife with 18 cm blade is designed for precise filleting of fish and fine slicing of meat. A fillet knife must be long and thinly ground to follow the natural contours of bones and fish bones. Depending on the task, flexibility can vary, but precision and control remain essential.
The blade is made of X50CrMoV15 stainless steel, a proven European steel known for corrosion resistance, good edge retention and easy resharpening. The slim grind ensures clean cuts when working close to bones, skin and fine structures.
This model features an integrated finger guard to prevent the hand from slipping onto the blade during use. The handle is crafted from lacquered natural beechwood sourced from French farms and fixed with two rivets for stability. After use, the knife should be washed by hand, dried thoroughly and occasionally treated with a suitable wood care oil. Do not leave it soaking in water. Avoid standard cooking oils, as they do not penetrate deeply into the wood.
