A catch basin with a combination whetstone from BÖKER in Solingen serves as a knife sharpener.
These types of waterstones are artificially manufactured. The advantage is that an even grain is constructed in the stone. 600 is quite coarse, which corrects nicks and chips. The material removal is therefore comparatively higher. The extra width of the bench stone is beneficial during grinding.
Put the whetstone in water for 5-10 minutes. As soon as no more air bubbles rise, you can start. During sharpening, the bench stone should be continuously wetted with water. Position it with the collecting basin on a non-slip surface.
Draw the blade across the stone in both directions, away from your body and then back towards you, each time at an angle of 10-15° and applying light pressure. Start at the tip of the blade and continue across the centre of the blade to the end of the blade. After a while, a fine burr will form. Repeat the process on the other side of the blade. Depending on the necessity, repeat the steps several times. It is important to keep the angle constant. Some people use a grinding aid for this.
To achieve an optimal finish, repeat steps 4 - 5 on the finer stone side.
Finally, draw the blade with two strokes diagonally towards the cutting edge. Now the last burr should be removed and the knife should have the optimal sharpness.
Rinse the whetstone and remove the abrasive material. Then clean the knives carefully with hot water.
