A combination whetstone from BÖKER in Solingen with a plastic collecting basin.
These types of waterstones are artificially produced. The advantage of this is that you get a consistent grain in the stone. In this model, one side is 2000, the finer one is 5000. The 2000 side is used to refresh the sharpness, while the 5000 is used for the fine work. The extra width of the stone surface is beneficial during grinding, as is the high removal rate.
Put the whetstone in water for 5-10 minutes. The stone is optimally soaked as soon as no more air bubbles rise. It should be continuously moistened with water during the sharpening process. Position it with the collecting basin on a non-slip surface. Initially, a grinding aid may be beneficial.
Draw the blade in both directions, away from the body and then back towards it, each time at an angle of 10-15° and with light pressure over the entire stone. Start at the tip of the blade and continue over the centre of the blade to the end of the blade. After a while, a fine burr will form. Repeat the process on the other side of the blade. Repeat the process on the other side of the blade as necessary. It is important to keep the angle constant.
To achieve an optimal finish, repeat steps 4 - 5 on the finer side of the stone.
Finally, draw the blade with two strokes diagonally towards you. Now the last burr should be removed and the knife should have the optimal sharpness.
Rinse the whetstone and remove the abrasive material. Then clean the knives carefully with hot water.
