THE FUNCTION
The sharpening steel hard chrome plated and carbonized steel has a fine textured surface. Due to the hardening to approx. 64 - 65 Rockwell this sharpening steel is very robust. The fine surface structure ensures the least possible material removal from the knife. With the right technique, you can straighten the edge and maintain the usual sharpness of the knife. Even a flipped edge is straightened again by the groove structure during sharpening.
Handling a sharpening steel is not that difficult with a little practice. Place the knife blade on the sharpening steel at an angle of 15° - 20° and guide the blade along alternately to the right and left. It is important to make the same number of sharpening movements on both sides. The sharpening movement must begin with the end of the knife blade in the area of the tip of the sharpening steel and be guided under light pressure in a large arc so that it ends with the tip of the knife near the handle of the sharpening steel.
