If you don't like hand washing, you don't need to read any further.
Because such fine cutlery absolutely requires care by hand. Always. After all, the manufacturing process itself was a masterpiece involving over 120 steps.
This includes forging the blade from a single piece.
And only where it says EICHENLAUB can the initial M for Merten, the couple who founded the company, be added as a crown.
Houndwood, also known as Honduras, is an extremely dense and therefore very hard, durable wood from the rosewood family.
Its fine grain is a light reddish to almost black streaked brown.
It comes from controlled forest cultivation in Central America and is felled using the so-called “eco-logging system”. Transporting the tree out of the forest then becomes oxen's work. To avoid damaging the forest floor, oxen are harnessed to the barge to haul what is now one of the most expensive woods in the world. Does the oxen care? Presumably not, because he gets nothing out of it.
On this side of the world, however, we can reconstruct the origin of the wood. That is what “logging system” means. The creation of a log, in this case the origin.
