This CAPUCHADOU is a homage to the home of the BRAS dynasty, the Aubrac, where the FORGE DE LAGUIOLE also has its domicile. A regional knife designed by famous chefs, who practically intended it to be dishwasher safe. The connection is a brass ferrule. The appearance of this knife was designed by the brothers André and Michel, as well as their cooking son Sébastien.
A CAPUCHADOU was a simple knife, not foldable, which was worn on a belt. Eventually, French craftsmen on their travels to Spain discovered that the folding version was much more practical. And when the vaziering gentlemen returned to their French homeland, a local blacksmith tinkered with the improved locking mechanism of the souvenirs. Pierre-Jean Calmels created the "Slipjoint" in 1829 and with it the "Laguiole droit". Shepherds needed a thorn, the "trocar". They used it to prick bloated animals in their rumen in order to escape gases. It took about another twenty years of development until the pocket knife had found its slender form. Anyone who went to Paris to work was a waiter. And so a corkscrew was necessary to use the knife as a working tool. From 1880 this function also enriched the Laguiole knife. In the Occitan dialect spoken in the Aubrac, there is a multitude of terms that all mean one and the same thing: Capuchadou, Capujadou, Capuzadou, Capujador, Caputzadou. Farmers used this cutting tool to prune branches.
