A Chinese chef's knife in the typical shape of a cleaver. For cutting and chopping vegetables, herbs and meat. For crushing garlic and peppercorns, fennel seeds. However, do not use it to chop bones. This requires a real chopper with a thicker blade. Just as an aside, I share my pizza with a chai dao, then I say "Ciao Dao" and think: international understanding can be that simple. Because what does "Chai Dao" mean? A chef's knife. Just a chef's knife. And cooking is really fun with this light-coloured beauty. Olive wood is very hard, dry, light in colour and I always think of water, summer, sun and fine food when I look at it. The blade is really very sharp, stiff and does not bend when cutting hard food. Another practical feature is that if you cut a lot of vegetables, you can simply use the large contact surface of the blade to transfer them straight into the pot or pan. I admit: it is one of my favourite knives because it is very sensual to cook with. Just knowing that the olive wood used for the scales is 500 years old makes an impression on me.
Please clean the knife by hand immediately after use and do not use any acidic cleaning agents.
Do not cut on stone or ceramic as this will preserve the sharpness of the blade.
