Hosta, the material used for the handle, is a robust plastic that is considered to be heat-resistant and resistant to deformation. Above all, the series is considered to be absolutely seamless and therefore suitable for use in gastronomy because it complies with hygiene regulations. The knives are manufactured in over thirty work steps. Even though the term ‘Santoku’ translates as ‘three virtues’:
meat, fish and vegetables can be chopped with it, I would still recommend washing it by hand. The hollow edge is designed to prevent the food from sticking to the blade. The same length is also available with a smooth edge.
Of all the series from the manufacturer GÜDE, the ALPHA series offers the widest variety of models. You will achieve the longest-lasting sharpness if you do not cut bones and only work on wooden or suitable plastic chopping boards. In this context, you should also pay due attention to how you store your chef's knives. A knife block, magnetic strip, blade guard or drawer insert would be useful.
