NAKIRI refers to a vegetable cleaver in the typical square shape. It originated in Japan from meat cleavers that were sharpened on one side. Its practical wide blade shape makes it possible to quickly transport the chopped ingredients from the board to the wok, pan or pot. The stainless steel, with a final hand-polish, is mounted in a collar that is fixed to the round boxwood handle. This knife is intended only for vegetables and fruit, not for meat or even bones. The lighter construction is not designed for bones.
BOXWOOD is the hardest wood that Europe has to offer. After sufficient drying time of several years, it is so dense that it sinks in water. Typical of PALLARÈS is the round shape of the handles with a steel ferrule at the transition. A peg is fixed in the wood.
