The blade shape of the Japanese Gyoto chef's knife in combination with a handle made of local fruitwood is characteristic of the K5 model from ROBERT HERDER WINDMÜHLENMESSER.
Balanced to cut, fillet and carve on a board, even when rocking on one leg, whether fish or meat, fruit or vegetables are on the menu. This blade, with its Solingen thin grind, will even cut through a soft tomato. The grinding angle is set high near the handle, enabling a particular sharpness with a long cutting durability.
A higher degree of hardness is achieved in the non-stainless carbon steel version, making the blade thinner and sharper. It is part of this material that it develops a patina. This is harmless. However, some people find the taste of iron in combination with milk and acidic fruits disturbing.
Plum wood is blessed with great resilience, which makes it very suitable for intensive use in the kitchen. Added to this is its extraordinary beauty with wonderful colourings. If someone were to say to you, ‘A plum like that?’ you can feel honoured.
