How to Use the BÖKER Whetstone for Perfect Knife Sharpening:
- Preparation: Submerge the sharpening stone entirely in water for 5 to 10 minutes. As soon as air bubbles stop rising to the surface, you are ready to begin. Place the stone inside its water basin on a non-slip surface. During the sharpening process, ensure the stone is constantly kept wet.
- Coarse Sharpening (600 Grit): The 600-grit side is relatively coarse and is designed to correct small nicks, damage, or minor chips on the edge. Because the material removal rate is higher, it quickly restores a proper bevel. The extra width of this bench stone helps keep your strokes smooth and steady.
- The Technique: Hold the knife at a consistent angle of 10 to 15 degrees. Guide the blade with light pressure in both directions—moving away from your body and back toward you—across the entire surface of the stone. Begin at the tip of the blade, move through the middle, and finish at the heel. After a short while, a fine burr will form. Flip the knife and repeat on the other side. Repeat these steps as necessary, ensuring the angle remains completely constant (an angle guide may be useful for beginners).
- Fine Honing (1500 Grit): To achieve an optimal finish and crisp edge, repeat the exact same process on the finer 1500-grit side of the stone.
- Final Deburring: To finish, draw the edge diagonally toward yourself against the cutting direction with exactly 2 strokes per side. This removes the last remaining micro-burr, bringing the knife to its peak, razor-sharp potential.
- Cleaning: Thoroughly rinse the whetstone to remove the sharpening sludge (slurry). Afterwards, carefully clean your sharpened knives with hot water.
