For a long time, this was only available in the form of knives and forks until 1910, when August Merten expanded the product range to its current diversity featuring dessert, fish, fruit, and serving pieces. In 1928, the EICHENLAUB brand was officially registered and remains an undisputed symbol of first-class forged cutlery to this day.

Since April 1998, Eichenlaub production and the trademark have belonged to Windmühlenmesser Manufactur Robert Herder GmbH & Co. KG, where the forged cutlery is continued and developed in traditional workshop quality. The cutlery pieces are forged in one piece from stainless chromium-vanadium steel. All knife blades feature a matte blue-glazed finish—recognized by their scratch-free shine and a faint blue shimmer visible in the microscopic grooves under certain light.
The handle scales are permanently attached to the cutlery pieces using polished brass or aluminum rivets. Over 70 manual work steps are required before a piece of cutlery finds its place on a set table.
