What is a “Hippe”? In gardening terminology it describes a knife with a curved blade used for pruning and harvesting. In another, more poetic sense, the word also refers to the scythe often associated with the figure of death. Yet the sweetest “Hippe” of all is something entirely different: a delicate rolled wafer pastry made from sugar, egg white, flour and cream. While still warm it is shaped into hollow tubes and hardens as it cools. Perfect with ice cream, wonderful to look through, delightful to bite into. Eat enough of them and no one will ever call you a “thin Hippe”. Hip hip hooray.
