The narrow, slightly curved blade enables wafer-thin slices to be cut without the meat becoming fibrous and sticking to the metal. Protect the precious blades by only cutting on cutting boards made of wood or special plastic, but not on stone, marble or glass.
61 degrees Rockwell means a very high degree of hardness, which, with appropriate care of the Damascus chef's knife, ensures long-lasting edge retention and corrosion resistance. The carbon content of the steel is 1 % and 1.5 % cobalt. Compared to the VG 10 metal, also known as ‘gold steel’, the VG-MAX variant has a higher chromium and vanadium content. 
When used professionally, you will work fatigue-free with this series. A long edge on the right-hand side of the chestnut-shaped handle ensures a secure yet comfortable grip on the knife. The continuous tang, called ‘full tang construction’ at KAI, is capped at the end of the handle with an elegant end cap. It ensures balance as well as stability. Pakka wood is wood veneer laminated with resin, which appears here in a timeless black-brown colour. And what does ‘manual honing’ mean? 
The English verb to hone means that an object has been honed or sharpened. This series is sharpened and polished by hand. 
In technical jargon, this is called ‘manual honing’ for the Japanese blade.
