This CAPUCHADOU is a homage to the home of the BRAS dynasty, the Aubrac, where the FORGE DE LAGUIOLE also has its domicile. A regional knife designed by famous chefs, in a very original appearance with a black forged blade, called Brut de Forge, combined with light beech wood. The connection is a matte brass ferrule. The appearance of this knife was designed by the brothers André and Michel, and their cooking son Sébastien.
A CAPUCHADOU was a simple knife, not foldable, which was worn on the belt. Eventually, French craftsmen on their travels to Spain discovered that the folding version was much more practical. And when the vaziering gentlemen returned to their French homeland, a local blacksmith tinkered with the improved locking mechanism of the souvenirs. Pierre-Jean Calmels created the "Slipjoint" in 1829 and with it the "Laguiole droit". It took another twenty years or so for the pocket knife to find its slim shape. Anyone who then went to Paris to work was a waiter. And so a corkscrew was necessary to use the knife as a working tool. From 1880 this function also enriched the Laguiole knife. In the Occitan dialect spoken in the Aubrac, there is a multitude of terms that all mean one and the same thing: Capuchadou, Capujadou, Capuzadou, Capujador, Caputzadou. Farmers used this cutting tool to prune and carve branches. And now you know the true story of a CAPUCHADOU.
