Professional maintenance is the cornerstone of culinary excellence. While hand-washing and oiling are vital, the "edge retention" is only secured by the consistent use of a sharpening steel. Over time, the microscopic edge of a blade folds over; though invisible to the naked eye, this causes the knife to feel dull. The medium-fine cut of this ZWILLING steel swiftly reforms the burr, ensuring a clean and effortless cut.
As a specialist since 1909, now in our fourth generation, we understand the technical nuances between steel, ceramic, and diamond rods. This classic model is the standard for German households due to its reliability. In addition to offering premium tools, I operate an in-house grinding shop to professionally sharpen scissors and knives that have lost their primary edge through years of use.
Application Guide: Place the blade at the tip of the sharpening rod at a constant angle of approximately 20 degrees. Pull the knife downward in a slight arc, moving from the tip of the blade to the heel. Repeat this motion on the other side of the rod to sharpen the opposite side of the blade. The speed of the movement is secondary to maintaining the precise 20-degree angle for optimal results.
