At the Japanese manufacturer KAI, SHUN stands for the best. The SHUN PRO SHO series is dedicated to professional continuous use with five traditional Nippon blade shapes. As the typical chestnut contour of the handle is asymmetrical on one side, it can only be used by right-handed users. Left-handers will have to let themselves be cooked. Pakka is a wooden core veneered with a more noble type of wood in black. The tang of the forged knife steel runs through the entire handle, which is decorated with a stainless steel cap at the end. The materials are processed seamlessly.
YANAGIBA refers to a willow leaf. It stands for a slicing knife with a long, narrow blade for making wafer-thin cuts for sashimi and sushi. The flat blade is hollow-ground, creating an air cushion between the steel and the food being cut. This is accompanied by a flat, albeit high, cutting edge which reduces friction.
The Damascus is decorated with KrickelKrackel. Japanese, of course. KlickelKlackel, in other words.
