LE BOUGNAT (they call it Bunjá!)
When the great rural exodus began in the middle of the 19th century, many people in the Auvergne were forced to leave their farms and their homeland, the volcanic region of the Aubrac, began to become deserted. The people of this region who were driven out by poverty were called the BOUGNATS. Some of them became seasonal workers and returned in the winter months after completing their work, leaving their families behind. Others traveled across France and as far as Spain in horse-drawn carts, trying to make a living by selling coal and wine, the treasures of their homeland. Even today, coal merchants in Paris are known as "Les Bougnats". Some settled in the big cities and others were drawn to the wider world. And for many, the little they could take with them from home included the small knife that Pierre-Jean Calmels had created for the people of this region and which had often been passed down from father to son: the LAGUIOLE. What meant a difficult fate for many individuals was a success for the knife, because it was scattered all over the world with the people. And soon it was known and appreciated everywhere for its excellent blade and its slim shape, which follows the line of the hand perfectly. For those who were drawn to faraway places, it quickly became a "passport auvergnat", a sign of recognition among like-minded people. Because whenever you saw someone sharing a piece of bread with this knife, you knew you were among friends, even in a foreign countryAnd those who fled poverty to the big cities of France were often able to build a successful new life there as innkeepers. This is because they brought with them two prerequisites that laid the foundations for their gastronomy, which is still highly regarded today: their Auvergne cuisine, which is famous throughout France, and their wine. They founded restaurants and bistros and became innkeepers. And when they returned to their homeland from time to time, they asked their blacksmiths to make them a new knife, to which they then added a corkscrew to make it easier for their guests to open the bottles.FORGE DE LAGUIOLE is producing a knife based on an original from this period, which we are dedicating to these people and their tradition: The BOUGNAT
