A preparation knife is universal. It can do everything, but it is not a specialist.
It is slightly narrower than a European chef's knife, same medium point shape, and shorter than the norm at 16 cm long. Use it to cut vegetables, divide heads of lettuce, chop herbs and fillet meat.
Typical of a forged design is the full tang. If you hold the tip of the knife pointing away from you, you will recognize the handle as the boot shank, and the thick metal bead at the transition from blade to hilt as the so-called "boot bolster." It is a hand guard to prevent injury during the cutting process. In combination with the end bolster, the chef's knives are perfectly balanced in the hand.
