When a bear strikes! Then a good two tons of weight - which is why the mighty machine is named after Master Petz - thunders down from above onto a knife blank to be forged in the die. The heated steel is formed between the upper and lower dies. And it is "bent and broken". If the blank withstands the procedure of a number of further work steps, it becomes a unique handmade knife from the GÜDE knife manufactory in Solingen.
Both the hard and soft cheese knives in the ALPHA FASSEICHE series are therefore unique. The Parmesan breaker must be robust and short in design due to the massive leverage effect when cutting from hard cheeses. For soft, often creamy cheese, holes in the blade are advantageous to reduce the adhesion of the fatty mass.
The oak wood of the wine barrels from which the handle scales of the ALPHA FASSEICHE series are made still contained red wine during the Second World War. It is over eighty years old before it is used for another purpose. GÜDE has associated it with three rivets. The middle one is called the "palm rivet." Good GÜDE. Even a RUSSEL wants to go to the sea.
